The Grand Company unlock is shortly after the Ifrit Battle portion of the Main Story. As far as I'm aware you can only join one GC at this time.

You can join any of the 3 Grand Companies, but after you choose 1 I think you're stuck with it at least until they implement a means to change companies. I haven't done too much with the Grand Companies myself other than the mount unlock quest, I don't even think any additional quests from the GC are available until the mid 40's.

You can only serve 1 GC at a time. You can change your allegiance to one of the other two but you lose all progress and ranks; and if you decide to rejoin your old GC you start from the bottom. The only thing you can do "quest-wise" for GC is the GC leves up until level 40 when the actual quest lines open up. As far as the leves are concerned, you can do GC leves for any of the three GCs but you get extra credit for doing leves specific to your GC. Personally, I find the leves to be lacking. You get way more seals from vendoring gear and running FATEs for the effort involved. I save my leve allowances for crafting leves.

EDIT: The first and foremost task you should accomplish after joining a GC is to acquire 2,000 grand seals and then return to your GC and get your Chocobo! Life is so much better with a mount!

Grand Companies access is right after Ifrit Main Story Battle. You go back to the Walking Sands after the battle and start the section for the GC. In 1.0 you did missions for all 3 as a recruit then you had to choose one. In ARR i don't know if you get to do recruit mission, but after you join, you will have several mission as you level rank in the GC.

I don't even think any additional quests from the GC are available until the mid 40's.

Those players were 1.0 players, they already start as a second lieutenant with missions in the mid 40s.

I don't think so. I am a fresh-faced player to FFXIV and aside from the leves there are no quests I have encountered yet for the GC. The one quest giver I have encountered doesn't give out a quest until 44ish. If there are more quest givers (not levemetes) then I have no clue where they are.

Same all I've seen on a fresh character is one that opens at 44.

I am currently Flame Sergeant First Class, what do I need to do to advance my rank?
I talk to the officer and ask for promotion, he wants me to talk to Swift but I think his quest start at level 45. Does this mean I have to get to level 45 before I can get a promotion.

The only reason I joined the Order of the Twim Adder is because I think the Elder SeedSeer is awesome and sexy as hell.
