I know I should do all at some point but which would benefit THM most?

Thaumaturges mostly wear cloth gear, so weaver would be a great craft to take up. Also Goldsmith is another good one since a lot of their weapons are made by goldsmithing and you'll also be able to make accessories.

Orin pretty much covered it. You'll get some leather-based gear from time to time, but it's mostly weaver and goldsmithing. As a warning, weaver can rough in the early/mid-20s due to the requirement of diremite webs. There isn't really a good place to farm them since the one spot always seems packed when I've checked. Some try to work around this via leves, though. If you plan on taking both, may as well add miner and botany to the list.

most of the endgame gear repairs are leatherworking, also goldsmith makes your relic pre-cursor

I'd say goldsmith for the wands, another class makes the 2h staff not sure what that is though.

Not speaking from experience, but since most staffs are made of wood, I'm gonna pop out and just say carpentry. :)

Goldsmith lvl 50 is required to meld and create your relic weapon precursor for black mage.

Weaver will make you the following gear: Helm, Chest, Gloves, Belt, Pants, Boots.
Goldsmith will make you the following gear: Necklace, Earrings, Wrist, Rings, and Weapon.

So, if you want to craft your own gear as you go, you should keep both Weaver and Goldsmith leveled.

Also weaver and goldsmith, but carpenter is also an option as they make some wands for us. Alchemy makes the lvl 50 weapon for us which we need for relic so enough to choose from.

Weaver and Goldsmithing, too, but add Carpenter for weapons. To be honest, finding weapons/armor 1-50 shouldn't be hard or expensive, though. Accessories are more on the scant side from quest rewards, but odds are NQs will be on the cheap, too.
