There is a gold/yellow "Q" icon that means you need to kill those mobs for a quest. There's also one that looks like a couple of curves, and that means it's a mob that's in your hunt registry.

I've also seen an icon that looks like a bluish sunburst or star (not sure how else to describe it). I haven't been able to figure out exactly what that icon means yet.

The blue star icon means the monster has a buff on it, making it harder to kill. There are some quests that send you after these monsters, with a potion to use on them that removes the buff.

I believe that means they're actively participating in a levequest.

The star has been explained already, but the colors represent type of aggression.

Blue = passive.

was the agaric fly mission in the shroud at 30 supposed to be as hard as it was.. i was only taking small nics off its heath barwhile it hit me for 5 times what i was doing to it. if a lnc hadnt come in and saved me id have died. speaking of which i thiught you couldnt attack a force spawned quest mob that belonged to someone else also lnc was taking HUGE chunks of its health compared to me. and no my equipment nor armor was broken of damaged

Sure you can attack a mob that's been force-spawned by someone else.

Odds are there was a key item you were supposed to use to make the flies not badasses.

I'm pretty sure I know what quest you're talking about as I healed a stranger who had trouble with it while I was passing by and eventually I came upon the quest and completed it myself. Many people don't realize that on some quests they give you items to help you defeat the mobs. If you get in the habit of clicking past all quest text you may not notice.

I see that all the time and I laugh at them when I raise them. Read the damn quest text. It tells you everything you need to know.

What is the blue icon that looks like and aliens head (best description I can think of)? I'm guessing it means they don't aggro, but I'm not 100% sure of that.

I believe that only applies to mobs that are forced spawn during a levequest. Those mobs have an icon that looks like a silver rectangle that's tilted at a 45 degree angle. If you try to act on a mob with that icon that's not for your own levequest, the game will show you an error that you can't perform your action against an enemy that's a part of someone else's duty.
