Thief isn't really a class in ffxiv, but you can still make one. You just need the following abilities:
Archer: (Hide, Flee)
Chameleon: Blend in with your surroundings, consuming TP to reduce enmity.
Quickstride: Quicken your stride, increasing movement speed.

Pugilist: (Steal, Perfect Dodge?, Sneak Attack)
Steal: Rifle through an enemy's belongings, stealing a random item. Chances of success increases with stealth.
Featherfoot: Tread lightly, increasing evasion. Effect fades after evading an attack.
Blindside: Strike from an enemy’s rear, increasing attack power by half of your dexterity.

Lancer: (Trick Attack, Sneak Attack)
Collusion: Employ deception, transferring the enmity generated by your next successful attack to an ally positioned between you and your enemy.
Overrun (Weaponskill): Close in on an enemy, increasing TP and dealing piercing damage. Can only be executed when the target is unaware of your presence.

The only thing missing now is a dagger wielding class.

According to their descriptions they can, though I can't confirm if there are actually any daggers in the game yet. There are definitely short swords, at least.

Good list, though I wouldn't consider it all-inclusive. There are other Thievish abilities that aren't carbon copies of abilities from XI THFs too.

Never confuse your inference as the listener for an implication of the speaker.

Good games are subjective like good food is subjective. You're not going to seriously tell me that there's not a psychological basis for why pizza is great and lutefisk is revolting. The thing about subjectivity is that, as subjects go, humans actually have a great deal in common.

Well i tried buying a new sword for my gladiator on the beta from an NPC, and there was a dagger listed there for gladiator so i think theres definetly daggers in the beta, only saw 1 though, and i think it needed rank 17 to equip it, and it was quite expensive lol

They should allow archers to have daggers, if they are not going to make a thf class. Gladiators do not have the dex and agi to pull a thf job.

You want an archery class not to be able to use any bows and arrows? This isn't XI after all, we can only have one weapon equipped.

Also, AGI is no longer a stat.

I wonder if this will have an effect on stealth. Maybe make your foot steps fall silent for a time, or some such.

It sure would make that easier to accomplish.

Not sure if Chameleon = stealth, to me it seems it's more like a skill to reduce enmity during a battle.

As I read the Zam's wiki, there's an Active mode and Passive mode in the game, if Quickstride is an ability that can be used in Passive mode, then I think this would be more like Flee. I'm guessing when you're in Active mode, your movement speed should be reduced according to the weapon you use and this speed should be slower than running in Passive mode. If that's the case and if Quickstride is an Active mode ability, then I think this ability would only let you run in Active mode with same speed as running in Passive mode.

When I think about building my Pug, Collusion was one of the abilities that I would like to put in my ability list. But on the second thought, since Lancer uses mid range weapon and Pug can only use short range weapon, so I don't know if this ability would work on a short range weapon.

Overrun is a weapon skill, I doubt if you can use this skill when you equip a weapon other than a spear (or any Lancer class weapon).
