I have done a bit of fishing today, getting to rank 5. I now have a large amount of fish and I am not sure what I can do with them... Should I just sell them or use them somehow? According to this site for crafting recipes:

I can cook up some fish, but what do I need in order to do this. Also I am not sure at all where to get these shards that are in the recipes (IE Fire shard). Thanks for answering the stupid questions of a new player!

I've gotten shards from logging and I think you can get them from monsters too. To cook the fish you have to use a Weathered Skillet to change to Culinarian.

Normally you just get shards from fighting monsters and whatnot...I just started fishing a few mins ago before I logged off due to fear of maintenance and I managed to fish up a few fire shards while just fishing, haha.

As for cooking, you'll prolly have to go to the cooking guild and buy a frying pan. Past equipping said frying pan, I can't help too much because I haven't started crafting yet in the game

Shards for crafting are automatically added for you. I can't answer many questions about crafting, as I only took Weaving up to 5 in beta. And I haven't done any cooking/fishing. But if you have all the ingredients needed for the recipe, including crystals just open up your menu, select the craft option, add the non-crystal ingredients, choose the hand that has the tool equipped you need for that particular synth, and then it'll give you a list of items you can create. Just follow it from there, and you should be okay. It'll add the crystals in for you during one of the steps.

Hope that helps.

Edit: Misread and thought they were asking how to add crystals to the recipes and not where to find them. Oops.

Sorry man I'm not sure. I'd also like to know if you can fish up monsters too like FFXI.

So far, I have not fished up a monster in any rank 1 or 2 streams/lakes/ponds.

A possible retainer idea

In order to use the fish you've caught in cooking recipes, you'll need to equip the items to change to the Culinarian class. Check out the wiki for more information about Culinarian. Which city you're in is what will dictate where you can get the skillet and knife to begin crafting edible items.

ooo another quick question, what is the point of the +1 or +2 no the end of gathered materials such as Tiger Cod +2)? Will they cook into different things or more potent somehow? Or are they just worth more for selling?

If you craft with higher quality materials, the end product will be slightly better than one made with standard materials. The +# is the level of quality these raw materials have. So a sword made from start to finish with +3 items will have better durability and stats than one made without.

another question about fishing. There are several abilities I have, such as Wrist Flick. I am unsure how to effectively use this while fishing. While I am fishing I cannot access any abilities, and if I activate Wrist Flick then go to fishing, by the time I get to actually catching a fish the effect has worn off. What am I doing wrong here with this??

Wrist Flick, if you read the description, is for combat.
