Don't know about any of the adventure games, but I played the **** out of the X-Wing and TIE Fighter games back in their heyday. Never quite finished either of them, but **** they were fun. They just don't make them quite like that anymore - I rented Ace Combat when it first came out and it just didn't feel the same (I blame the analog sticks!)
May I humbly suggest looking into Freespace? I believe they have Freespace2 opensource now, and you can play the Freesapce 1 and 2 campaign through it. You may find it here: http://scp.indiegames.us/
I consider Freespace to be one of the few worthy successors of the X-Wing/Tie-Fighter games, as well as Project Sylpheed on the x360. Sylpheed might be a bit more arcade, but it was really cheap even at launch, and an excellent modern space combat game.
Freespace on Insane difficulty is ridiculously fun.
