When exchanging leves, what does the star and a number next to it mean? Thank you.

Its the level you completed it at, when turned in the end reward for the next leve you are applying it to is increased by whatever amount that star is

Don't think that is true, I finished all of my first leves at 5-star and only traded them in for 1 or 2 stars. Also, the stars change based on which leves you try to turn them in for. I have even exchanged leves I haven't completed at all for 2 stars. Leves from other cities tend to be worth more when exchanging as well. The star rating is simply a measurement of how much bonus you will get when you trade it in, what determines it remains to be seen.

Also, I believe your supposed to get a better bonus if you trade in a leve from with a different virtue than the one you're trading it for (the pretty stained glass pictures are supposed to represent different virtues, apparently).

This would be correct from my experience as well.

but what exactly does trading them in do?
the only difference ive seen is a little more money but the item rewards stay the same.

If you trade in enough stars you can get better item rewards, I had it happen once. Also, on the higher level leves, the gil rewards are substantial.

Rank 1-10 battleleves usually give 0 stars. I did some crafting leves and they gave 1 stars. A rank 10-20 battleleve gave me 2 stars.

You can use them to up the rewards for the Guildleve. This includes, Gil, better items, more items, faction points, guildmarks(?), etc. Higher the stars, the better the rewards, obviously.
