I have a lot of stuff I want to sell. But I have no idea what thy are worth if no one else is selling it. Is there a way to find what the sales history? or a way to know a fair price? The only thing I can find is what an NPC will pay.

its up to you to be smart and knowledgeable about what you are selling. Asking your homies what would they pay would be a good start. Personally, to figure out the worth of an item comes down to knowing basic supply and demand. If you know what item turns into what, what it's used for and so forth then you can put it up based on what you think it should be put up for.

If you have an empty market for your item then you can set the price to anything and no one will have anything to compare to. by market nature the zero supply at that moment should send your price up. Will someone come by and undercut you? Probably. But that's how the world works.

This is a good point. Check out our Item Database to get an idea what your item is used for.

Generally, if I have an item that nobody else is selling, I'll sell it for a bit more than what it would go for normally (but not by an absurd amount).

For example, let's look at a Tallow Candle. Right now there are only two others listing it, and it's listed at 999,999,999 (aka, it may as well not even be there).
The Tallow Candle is used in a Lantern Shield -- a fairly popular item in and of itself. The Lantern Shield is used to make a Bladed Shield.

Now, I have a Tallow Candle +3. People want HQ gear. HQ gear need HQ ingredients. If someone wants an HQ Bladed Shield, they'll want an HQ Lantern Shield, which will in turn need HQ ingredients. So my list price of 10k for the +3 Tallow Candle is 1) pretty fair and 2) a good profit.

I see retainers selling thing for what an NPC would pay. This id not good for any one trying to sell there stuff. If thy had a clue what its worth thy would ask more for it. FFXI AH had a sales history so you would know what something of what it is worth.
