that first option is pretty close to my machine, pretty good quality for little cost.

I see three possibilities,
first: the motherboard could have 4 RAM slots with 3 having 2 gigabytes and the forth having 1
Second: the motherboard could have 4 RAM slots with one having 4, one having 2, one having 1, and one having zero
and third, it could have 8 installed but the graphics card uses the addresses for the forth gigabyte, making it seem like it has 7

Typo possibly? This could have just been a simple typing mistake that was overlooked. In which case I would bet it's 8gigs/ given the processor and MB combo

Anyways, I'm guess going with the first option. Any thoughts on how well ffxiv will run on this pc?

my guess would be possibly medium with no multi-sampling, and it will be smooth. Although the graphics on this game are sick, but I think that rig will pull off medium. Run a furmark bench test when you get it and see what the scores are. You can always overclock to pick up some performance.
