I feel noob as hell for this considering I was on XI for 8yrs I have no clue as what is what on XIV.

So if there is some kind of guide that can help it would be great but until then here some questions.

Is there anything like the Signet from XI I can talk to an npc for?

How do I exactly start guildleves?

What's the difference between a guildleve and a guildhest?

Don't know if this is something from 1.0 or of I just misinterpreted something, but what is this thing I hear about gaining xp when you are logged out? (makes no sense to me)

Umm that's all I can think of for now... Thank you in advance though, it feels like those years in XI didn't prepare me for this at all XD

1. Not that I know of.
2. The main story quest line will take you through that. Just keep working on the main story quest line and you'll have to do one.
3. Guildleves are solo quests, guildhest is the duty finder for the instanced dungeons
4. If you log out in an inn room or sanctuary, you get what's known as rested xp. It basically gives you a bonus to your first x amount of xp you earn when you log back in.

Hey... welcome to Eorzea.

In order of your questions:

1) Yes, and it's called Sanction, but it's only available once you join a Grand Company (you'll get to this by progressing through the storyline).

2) You need to unlock access by progressing through the story, then once you have it you can go to any main camp that has a guildleve icon and pick them up from the guildleve giver. They will ask you to do a trial guildleve first, then once you've completed it you can do as many as you have available (I think the credits to initiate Guildleves accrue 1 per ever 3 earth hours, and stack up to 99).

3) Guildleves are like personal quests that you can use for exp and gil. People generally use them for solo leveling. Guildhests are "training" type fights/mini-raids that also give gil and exp, but are done through the duty finder.

4) You can accrue a rested experience bonus if you log out in a sanctuary or inn, so always do so!
