Sorry for the noobish question.
I have my CNJ at 21 - what should be next on my agenda? Level up crafting so I can start messing with materia? Level THM or ARC?

Depends.
If you want to level, do your ACN sub-job and just keep doing dungeons on your CNJ/WHM. You'll be 50 soon. You'll get super easy invites and can save your quests and leves for this DD jobs that take 8 hours to find a party for duty finder.
Keep doing the main storyline quests. They are apparently infinite based on my time getting to 34. Things never freaking end.

Actually just hit the same level.
I went and finished my level 11-20 hunt log, and I've been keeping up with the main storyline so I have a quest out in the desert waiting on me. Really though, I've decided to spam dungeons a bit while healers are still in demand and try to gear up a bit. There's some nice mage gear in the dungeons, not just body and head pieces but accessories too. Sporting new earrings from Tam-Tara.
I think the next major thing after that will be working on some sub classes, such as ACN and THM.

Brayflox and Haukke Manor are both great exp for their levels.

Sunken Temple is the next instance after Brayflox's Longstop at 35. Then Cutter's Cry at 38, Stone Vigil at 41, Dzemael Darkhold at 44, and Aurum Vale at 47. Not all of these instances are required for the main story, though, and some are significantly more difficult to get groups for than others.
